PUMPKINS ... yummy!

Besides being great for Halloween carving, pumpkins make for wonderful eating. The food guide pyramid recommends we eat 1.5 cups of orange vegetables every week. A half cup of pumpkin has 4 grams of fiber, 50 calories and no fat or cholesterol. Pumpkin has more beta-carotene per serving than any other food eaten. Eating orange vegetables help to maintain a healthy heart, healthy immune system, and may protect against some cancers.

We can include pumpkin in our diet by putting it into a smoothie, soup, muffins, pancake, cooked cereal or a healthy dessert such as cookies or pie.
