FIT CITY DULUTH OCTOBER, 2008 E-NEWSLETTER
FEATURED OCTOBER RECIPE OF THE MONTH

CRANBERRY PEAR SAUCE
4 cups fresh cranberries
1 large sweet, apple (try Pink Lady, Gala, Orin or Haralson)
2 large ripe pears (try Boscs)
1/2 cup honey (or less, to taste) 1/2 cup water
1/2 tsp nutmeg
1/2 tsp cinnamon
optional: 1/4 tsp orange zest

Peel & finely shop the apple and pears. Combine all ingredients in a saucepan over medium-high heat. Bring to a boil, stirring frequently until cranberries pop open and sauce thickens. Serve hot with your holiday meats or tofurkey, or chilled with cheese and crackers or rustic bread. TIP: Try adding raspberries for extra flavor & sweetness.*
